The restaurant’s newest truffle-infused creations will feature an array of appetisers, mains, and desserts, available exclusively during the month of November.
Expertly curated by Chef Delfino Chiarello, every dish on the White Truffle Menu speaks to his signature culinary style of simple yet emotive, classic yet innovative. Backed by 20 years of experience and inspiration from his grandmother, Chef Delfino utilises modern techniques, allowing the ingredients to speak for themselves. The newly launched menu reflects his passion for preserving Italian tradition, paying homage to the white truffle season and the time-honoured craft of Italy’s truffle hunters, known as ‘trifolao’.
Each appetiser on Cafe Milano’s White Truffle Menu offers an enticing prelude to a truffle-infused adventure. Starting with the Zuppa del Giorno, guests can relish the chef’s daily creation, showcasing the essence of seasonal ingredients in a comforting, flavour-rich soup, or opt for a taste of elegance with the Capesante Arrosto, presenting pan-seared Hokkaido scallops paired with a crisp fennel salad, Oscietra caviar, and a luxurious truffle beurre blanc. For a true depth of flavours, the Tartare di Manzo Wagyu combines silky Wagyu beef, delicately topped with a quail egg and honey truffle dressing, bringing the white truffle’s earthy notes to life in each bite.
As the experience unfolds, guests are treated to a decadent array of main courses including the Tagliolini Fatti in Casa, Tartufo Bianco with freshly made tagliolini pasta, coated in a rich truffle butter sauce and crowned with shaved white truffle. Alternatively, the Risotto con Stracciatella, which is complete with Sicilian red prawns and white truffle, is a luxurious take on classic risotto while the Filetto di Moro con Quinoa Tostata presents a marinated black cod, toasted red quinoa, seasonal vegetables, and a delicate dried mushroom consommé. Lastly, the Filetto Rossini is a masterpiece for meat lovers, with a tender fillet enriched by earthy truffle, sautéed spinach, and a luscious foie gras jus.
Finally, for a touch of sweet indulgence, the Cioccolato Bianco e Castagne offers a seasonal treat that’s as sumptuous as it is memorable. This exquisite dessert combines silky white chocolate mousse with a rich chestnut crémeux, complemented by truffle gelato and a satisfying dark chocolate crunch. Adding to the experience, guests also have the option to enhance any course with extra truffle shavings for AED 110 per gram.
