Stepping into Dubai was a natural move for Dario Cecchini, as his menu reflects the belief that every part of the animal is to be respected and utilized. His masterpiece creations include preparing dishes that would surprise some, which explains why tongue and beef heart demand equal attention on a menu that includes lobster, Wagyu beef and a 28-day dry aged beef as well.


High up on the 74th floor presents stunning views of the city below, with floor to ceiling windows and strategically placed tables, and a divine meat bar presenting all cuts on the menu for the knowledgeable meat lover and for the adventurer at heart.

The classic Bistecca alla Fiorentina is the main star at Carna, but a taste of his culinary genius is present in more items in the current menu such as the “Beef heart skewers” from The Butcher Shop section of the menu. Pieces of beef heart marinated in Dario’s own Tuscan Chianti herb salt and olive oil, grilled to perfection, and served on a bed of rocket leaves and topped with fried shallots will impress even the pickiest eater with the tenderness and depth of flavor of this simple yet beautiful dish.


The ethos of Dario’s dishes is to present simple food with simple ingredients that result in beautiful flavors without masking the main element of each dish. Whether from the most prime cut of meat to the selection of seafood on the menu, such as the “Jumbo lump crab cakes” at the Raw bar. Sweet moist crab meat gently patted into cakes, accompanied by a silky remoulade and fresh vierge sauce.


Indulge in one of the most exquisite meats in the world with the Japanese A5 Wagyu beef “Kagoshima rib eye”, the very apex of quality with its rich buttery smoothness is best paired with our sommelier’s recommendation of a classic grape.


To end the meal and partake in a true taste of a fresh summer, you can never go wrong with a New York cheesecake. The “NY passion fruit cheesecake” at Carna is a must try. Bright, summery, fruity and sweet with cool passion fruit gelato, irresistible butterscotch sauce and topped with a honey tuile.


A legend in his own time, Dario hails from Tuscany, Italy, and by 1976 had made it a personal challenge to use every cut of meat, some not so well-known to produce superlative dishes, thereby cutting down on waste and promoting sustainability at the same time.  He encourages diners to try the lesser-known cuts, confident in their appreciation and enjoyment.
